Bacon and Onion Stuffed Baked Potatoes
These hearty stuffed baked potatoes are filled with crispy bacon and caramelized onions, then topped with melted cheese.
Ingredients - Serves 4
- Green onions - 2, chopped
- Cheddar cheese - 1 cup, shredded
- Salt and pepper - To taste
- Bacon - 8 slices, cooked and crumbled
- Onions - 2 medium, thinly sliced
- Olive oil - 2 tablespoons
- Russet potatoes - 4 large
Let's Get Started
- Preheat the oven to 400°F.
- Pierce the potatoes with a fork and bake for 1 hour, or until tender.
- While the potatoes are baking, heat the olive oil in a skillet over medium heat.
- Add the onions and cook until caramelized, about 15 minutes.
- Cut a slit in the top of each baked potato and scoop out the insides, leaving a thin shell.
- Mix the potato insides with the caramelized onions, bacon, salt, and pepper.
- Stuff the potato shells with the mixture and top with the shredded cheese.

- Top with the chopped green onions before serving.
