  1. Preheat the oven to 400°F.
  2. Pierce the potatoes with a fork and bake for 1 hour, or until tender.
  3. While the potatoes are baking, heat the olive oil in a skillet over medium heat.

  5. Cut a slit in the top of each baked potato and scoop out the insides, leaving a thin shell.
