Bacon and Onion Rosti

Bacon and Onion Rosti

Ingredients - Serves 4

Let's Get Started

  1. Cook the bacon in a large skillet over medium heat until crispy. Remove with a slotted spoon and set aside.
  2. In the same skillet, cook the onions until they are soft and caramelized, about 10 minutes. Remove and set aside with the bacon.
  3. In a large bowl, combine the grated potatoes, cooked bacon and onions, and salt and pepper.
  4. Heat the olive oil in the skillet over medium heat. Add the potato mixture and press it down with a spatula.
  5. Cook for 15 minutes, or until the bottom is golden brown. Flip the rosti and cook for another 15 minutes, or until the other side is golden brown.
  6. Serve the rosti warm, cut into wedges.
