Bacon and Onion Rosti
This Swiss-style potato pancake is a delicious combination of crispy bacon, caramelized onions, and golden brown potatoes.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Potatoes - 4 large, peeled and grated
- Onions - 2 medium, thinly sliced
- Bacon - 4 slices, chopped
Let's Get Started
- Cook the bacon in a large skillet over medium heat until crispy. Remove with a slotted spoon and set aside.
- In the same skillet, cook the onions until they are soft and caramelized, about 10 minutes. Remove and set aside with the bacon.
- In a large bowl, combine the grated potatoes, cooked bacon and onions, and salt and pepper.
- Heat the olive oil in the skillet over medium heat. Add the potato mixture and press it down with a spatula.
- Cook for 15 minutes, or until the bottom is golden brown. Flip the rosti and cook for another 15 minutes, or until the other side is golden brown.
- Serve the rosti warm, cut into wedges.
