  2. Heat the olive oil in a large oven-safe pan over medium heat.
  3. Add the garlic and cook until fragrant, about 1 minute.

  6. Add the soaked cod to the pan, skin side up. Season with salt and pepper.
  7. Transfer the pan to the oven and bake for 20-30 minutes, or until the cod is cooked through.
  8. Garnish with parsley before serving.
