Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 400°F (200°C).
  2. Prick the eggplants with a fork and place them on a baking sheet. Roast in the oven for 30-40 minutes, or until the skin is charred and the flesh is soft.
  3. Remove the eggplants from the oven and let them cool slightly. Peel off the charred skin and discard.
  4. Place the roasted eggplant flesh in a colander and let it drain for 10 minutes to remove excess moisture.
  5. In a food processor, combine the drained eggplant, tahini, minced garlic, lemon juice, olive oil, and salt. Process until smooth and creamy.
  6. Transfer the baba ganoush to a serving bowl and garnish with chopped parsley.
  7. Serve with pita bread and vegetable sticks.
