Baba Ganoush
Baba Ganoush is a delicious Middle Eastern dip made from roasted eggplant, tahini, garlic, lemon juice, and olive oil.
Ingredients - Serves 6
- Vegetable sticks - For serving
- Pita bread - For serving
- Parsley - 2 tablespoons, chopped (for garnish)
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Tahini - 1/4 cup
- Eggplant - 2 large
Let's Get Started
- Preheat the oven to 400°F (200°C).
- Prick the eggplants with a fork and place them on a baking sheet. Roast in the oven for 30-40 minutes, or until the skin is charred and the flesh is soft.
- Remove the eggplants from the oven and let them cool slightly. Peel off the charred skin and discard.
- Place the roasted eggplant flesh in a colander and let it drain for 10 minutes to remove excess moisture.
- In a food processor, combine the drained eggplant, tahini, minced garlic, lemon juice, olive oil, and salt. Process until smooth and creamy.
- Transfer the baba ganoush to a serving bowl and garnish with chopped parsley.
- Serve with pita bread and vegetable sticks.
