Avocado Chicken Curry
This creamy and flavorful avocado chicken curry is a delicious twist on traditional curry dishes.
Ingredients - Serves 4
- Cooked rice - 4 cups, for serving
- Cilantro - 2 tablespoons, chopped (for garnish)
- Salt - To taste
- Cayenne pepper - 1/2 teaspoon (adjust to taste)
- Turmeric - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, medium, finely chopped
- Coconut milk - 1 can (400ml)
- Avocado - 2, ripe, peeled and pitted
- Chicken breast - 2, boneless and skinless, cut into cubes
Let's Get Started
- In a large pan, heat some oil over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent.
- Add the chicken cubes to the pan and cook until they are browned on all sides.
- In a blender, combine the avocado flesh and coconut milk. Blend until smooth.
- Pour the avocado-coconut mixture into the pan with the chicken.
- Add the curry powder, turmeric, cayenne pepper, and salt. Stir well to combine.
- Simmer the curry for about 15-20 minutes, or until the chicken is cooked through and the flavors have melded together.
- Serve the avocado chicken curry over cooked rice.
- Garnish with chopped cilantro before serving.
