Atchara
Atchara is a traditional Filipino pickle made with green papaya, carrots, and other vegetables. It is sweet, tangy, and slightly spicy.
Ingredients - Serves 6
- Red chili pepper - 1, thinly sliced (optional)
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Sugar - 1/2 cup
- White vinegar - 1 cup
- Ginger - 1 thumb-sized piece, grated
- Garlic - 3 cloves, minced
- Onion - 1 small, thinly sliced
- Red bell pepper - 1, thinly sliced
- Carrots - 2 medium, julienned
- Green papaya - 1 medium, julienned
Let's Get Started
- In a large bowl, combine the julienned green papaya, carrots, red bell pepper, onion, garlic, and grated ginger.
- In a small saucepan, heat the white vinegar, sugar, salt, and black pepper until the sugar has dissolved. Remove from heat and let it cool for a few minutes.
- Pour the vinegar mixture over the vegetables and toss to coat evenly. Let it marinate for at least 20 minutes.
- If desired, add thinly sliced red chili pepper for some heat.
- Serve chilled as a side dish or condiment with your favorite Filipino dishes.
