Let's Get Started

  1. In a large bowl, combine the julienned green papaya, carrots, red bell pepper, onion, garlic, and grated ginger.
  2. In a small saucepan, heat the white vinegar, sugar, salt, and black pepper until the sugar has dissolved. Remove from heat and let it cool for a few minutes.
  3. Pour the vinegar mixture over the vegetables and toss to coat evenly. Let it marinate for at least 20 minutes.
  4. If desired, add thinly sliced red chili pepper for some heat.
  5. Serve chilled as a side dish or condiment with your favorite Filipino dishes.
