Arugula, Grilled Steak and Roasted Potato Salad
A delicious combination of steak, arugula, and roasted potatoes, all tossed together in a light and flavorful salad.
Ingredients - Serves 4
- Balsamic vinegar - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic powder - 1/2 teaspoon
- Pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Olive oil - 1/4 cup
- Potatoes - 2 lbs
- Arugula - 4 cups
- Steak - 1 lb
Let's Get Started
- Preheat oven to 425 degrees F.
- Cut potatoes into 1-inch cubes and place in a large bowl. Drizzle with olive oil and season with salt, pepper, and garlic powder. Toss to coat.
- Spread potatoes onto a baking sheet and roast for 25-30 minutes, or until golden brown and crispy.
- Heat a large skillet over medium-high heat. Season steak with salt and pepper and add to the skillet. Cook for 4-5 minutes per side, or until desired doneness is reached.
- In a large bowl, combine arugula, potatoes, lemon juice, and balsamic vinegar. Toss to combine.
- Slice steak and add to the salad. Serve immediately.
