Artichoke Salad
This refreshing artichoke salad is made with fresh artichokes, tomatoes, cucumbers, and a tangy lemon dressing.
Ingredients - Serves 4
- Salt and pepper - To taste
- Extra virgin olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Fresh parsley - 1/4 cup, chopped
- Feta cheese - 1/2 cup, crumbled
- Kalamata olives - 1/4 cup, pitted
- Red onion - 1/4 cup, thinly sliced
- Cucumbers - 1, diced
- Tomatoes - 2, diced
- Fresh artichokes - 4
Let's Get Started
- Fill a large pot with water and bring to a boil.
- Trim the artichokes by removing the tough outer leaves and cutting off the top.
- Place the artichokes in the boiling water and cook for 20-30 minutes, or until tender.
- Remove the artichokes from the water and let them cool.
- Once cooled, remove the outer leaves and cut the artichokes into quarters.
- In a large bowl, combine the artichokes, tomatoes, cucumbers, red onion, Kalamata olives, feta cheese, and parsley.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Serve chilled and enjoy!
