Let's Get Started

  1. Fill a large pot with water and bring to a boil.
  2. Trim the artichokes by removing the tough outer leaves and cutting off the top.
  3. Place the artichokes in the boiling water and cook for 20-30 minutes, or until tender.
  4. Remove the artichokes from the water and let them cool.
  5. Once cooled, remove the outer leaves and cut the artichokes into quarters.
  6. In a large bowl, combine the artichokes, tomatoes, cucumbers, red onion, Kalamata olives, feta cheese, and parsley.
  7. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  8. Pour the dressing over the salad and toss to combine.
  9. Serve chilled and enjoy!
