Arroz Con Leche
Arroz con Leche is a traditional Latin American rice pudding made with rice, milk, sugar, and cinnamon.
Ingredients - Serves 6
- Ground cinnamon - 1/2 teaspoon
- Raisins - 1/2 cup
- Vanilla extract - 1 teaspoon
- Cinnamon stick - 1
- Sugar - 1/2 cup
- Milk - 4 cups
- Water - 2 cups
- Rice - 1 cup
Let's Get Started
- In a saucepan, bring the water to a boil. Add the rice and cook for 10 minutes. Drain and set aside.
- In the same saucepan, combine the milk, sugar, cinnamon stick, and vanilla extract. Bring to a simmer over medium heat.
- Add the cooked rice and raisins to the milk mixture. Stir well and reduce the heat to low.
- Cook for 30 minutes, stirring occasionally, until the rice is tender and the mixture has thickened.
- Remove the cinnamon stick and discard.
- Divide the arroz con leche into serving bowls and sprinkle with ground cinnamon.
- Serve warm or chilled.
