Apricot Crumble Tacos

- Vanilla ice cream - For serving
- Taco shells - 6
- Butter - 1/2 cup, cold and cubed
- Salt - 1/4 teaspoon
- Cinnamon - 1 teaspoon
- Brown sugar - 1/2 cup
- Flour - 1 cup
- Cornstarch - 2 tablespoons
- Lemon juice - 1 tablespoon
- Sugar - 1/2 cup
- Apricots - 4 cups, pitted and sliced
Let's Get Started
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the sliced apricots, sugar, lemon juice, and cornstarch. Mix well to coat the apricots.
- In a separate bowl, combine the flour, brown sugar, cinnamon, and salt. Add the cold cubed butter and use your fingers to mix until the mixture resembles coarse crumbs.
