Apricot Crumble Quinoa

Ingredients - Serves 2
- Chopped almonds - 2 tablespoons
- Coconut oil - 2 tablespoons, melted
- Almond flour - 1/4 cup
- Cinnamon - 1/2 teaspoon
- Maple syrup - 2 tablespoons
- Dried apricots - 1/2 cup, chopped
- Water - 1 cup
- Quinoa - 1/2 cup
Let's Get Started
- Rinse the quinoa under cold water.
- In a saucepan, bring the water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15 minutes, or until the quinoa is cooked and the water is absorbed.
- In a separate bowl, combine the chopped dried apricots, maple syrup, and cinnamon.
