Apricot Cobbler Quinoa
This delicious apricot cobbler quinoa is a healthy twist on a classic dessert. Made with quinoa, fresh apricots, and a sweet crumble topping.
Ingredients - Serves 6
- Maple syrup - 2 tablespoons
- Coconut oil - 2 tablespoons, melted
- Almond flour - 1/4 cup
- Oats - 1/2 cup
- Cinnamon - 1 teaspoon
- Lemon juice - 1 tablespoon
- Honey - 1/4 cup
- Fresh apricots - 4 cups, pitted and sliced
- Water - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Preheat the oven to 350°F (175°C).
- Rinse the quinoa under cold water and drain well.
- In a saucepan, bring the water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15 minutes, or until the quinoa is cooked and the water is absorbed.
- In a separate bowl, combine the sliced apricots, honey, lemon juice, and cinnamon. Mix well to coat the apricots.
