Apricot Crisp Wraps
These delicious apricot crisp wraps are a perfect combination of sweet and crispy. They are filled with juicy apricots and topped with a crunchy oat crumble.
Ingredients - Serves 6
- Vanilla ice cream - For serving (optional)
- Tortilla wraps - 6
- Unsalted butter - 1/2 cup, cold and cubed
- Salt - 1/4 teaspoon
- Cinnamon - 1 teaspoon
- Brown sugar - 1/2 cup
- Rolled oats - 1/2 cup
- All-purpose flour - 1 cup
- Lemon juice - 1 tablespoon
- Brown sugar - 1/4 cup
- Apricots - 12 ripe apricots, pitted and sliced
Let's Get Started
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the sliced apricots, 1/4 cup of brown sugar, and lemon juice. Toss until the apricots are coated. Set aside.
- In a separate bowl, mix together the flour, rolled oats, 1/2 cup of brown sugar, cinnamon, and salt.
- Add the cold cubed butter to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Place a tortilla wrap on a baking sheet. Spoon a portion of the apricot mixture onto the center of the wrap, leaving a border around the edges.
- Sprinkle a generous amount of the oat crumble mixture over the apricots.
- Fold the sides of the tortilla wrap over the filling, then roll it up tightly.
- Repeat the process with the remaining tortilla wraps and filling.
- Bake the wraps in the preheated oven for 20-25 minutes, or until the tortillas are crispy and golden brown.
- Serve the apricot crisp wraps warm, optionally with a scoop of vanilla ice cream on top.
