Apricot Cobbler Tacos

- Vanilla ice cream - For serving
- Chopped pecans - 1/4 cup
- Oats - 1/2 cup
- Brown sugar - 1/4 cup
- Butter - 2 tablespoons, melted
- Flour tortillas - 6
- Cinnamon - 1 teaspoon
- Cornstarch - 2 tablespoons
- Lemon juice - 1 tablespoon
- Sugar - 1/2 cup
- Apricots - 4 cups, pitted and sliced
Let's Get Started
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced apricots, sugar, lemon juice, cornstarch, and cinnamon. Mix well to coat the apricots.
- Place the apricot mixture in a baking dish and spread it out evenly.
