Let's Get Started

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced apricots, sugar, lemon juice, cornstarch, and cinnamon. Mix well to coat the apricots.
  3. Place the apricot mixture in a baking dish and spread it out evenly.
  4. In a separate bowl, combine the melted butter, brown sugar, oats, and chopped pecans. Mix until crumbly.
  5. Sprinkle the crumble mixture over the apricot filling in the baking dish.
  6. Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the apricots are bubbling.
  7. While the cobbler is baking, warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  8. Remove the cobbler from the oven and let it cool slightly.
  9. To serve, spoon some of the apricot cobbler filling onto each warm tortilla and fold it like a taco.
  10. Serve the Apricot Cobbler Tacos with a scoop of vanilla ice cream on top.
  11. Enjoy!
