Antipasto Di Mare
Antipasto di Mare is a delightful Italian seafood appetizer that includes a variety of marinated seafood served with fresh vegetables.
Ingredients - Serves 4
- Cherry tomatoes - 1 cup, halved
- Mixed salad greens - 4 cups
- Salt and pepper - To taste
- Parsley - 2 tablespoons, chopped
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Olive oil - 1/4 cup
- Mussels - 1/2 pound, cleaned
- Squid - 1/2 pound, cleaned and cut into rings
- Shrimp - 1/2 pound, peeled and deveined
Let's Get Started
- In a large pot of boiling water, cook the shrimp, squid, and mussels until they are just cooked through, about 2-3 minutes. Drain and set aside to cool.
- In a large bowl, whisk together the olive oil, lemon juice, garlic, parsley, salt, and pepper.
- Add the cooled seafood to the bowl and toss to coat in the marinade. Cover and refrigerate for at least 2 hours, or up to overnight.
- When ready to serve, arrange the salad greens on a platter. Top with the marinated seafood and cherry tomatoes. Drizzle with any remaining marinade from the bowl.
