Mediterranean Branzino
A delicious Mediterranean-style sea bass recipe that's light and flavorful.
Ingredients - Serves 2
- Capers - 1 tablespoon
- Kalamata olives - 1/2 cup, pitted and halved
- Cherry tomatoes - 1 cup, halved
- Salt and pepper - To taste
- Fresh rosemary - 2 sprigs
- Garlic - 2 cloves, minced
- Lemon - 1, sliced
- Olive oil - 2 tablespoons
- Branzino fillets - 2 (6-ounce)
Let's Get Started
- Preheat the oven to 400°F.
- Rub the branzino fillets with olive oil, and season with salt and pepper.
- Place the fillets in a baking dish, and top with lemon slices, minced garlic, and rosemary sprigs.
- Bake for 15 minutes.
- In a bowl, mix together the cherry tomatoes, olives, and capers.
- Remove the fish from the oven, and top with the tomato-olive mixture.
- Return to the oven, and bake for an additional 10 minutes, or until the fish is cooked through and the tomatoes are soft.
