Let's Get Started

  1. Preheat the oven to 400°F.
  2. Rub the branzino fillets with olive oil, and season with salt and pepper.
  3. Place the fillets in a baking dish, and top with lemon slices, minced garlic, and rosemary sprigs.
  4. Bake for 15 minutes.
  5. In a bowl, mix together the cherry tomatoes, olives, and capers.
  6. Remove the fish from the oven, and top with the tomato-olive mixture.
  7. Return to the oven, and bake for an additional 10 minutes, or until the fish is cooked through and the tomatoes are soft.
