Anchoas en Vinagre
Anchoas en Vinagre is a traditional Spanish appetizer made with anchovies marinated in vinegar and served with garlic and parsley.

- Salt - To taste
- Extra virgin olive oil - 1/4 cup
- Parsley - A handful, chopped
- Garlic - 3 cloves, minced

- Fresh anchovies - 500 grams
Let's Get Started
- Clean the anchovies by removing the heads and innards, open them in half and remove the central bone.
- Place the anchovies in a deep dish with the skin facing upwards.
- Cover the anchovies with the white wine vinegar and let them marinate for at least 3 hours in the refrigerator.
- Drain the vinegar, and cover the anchovies with a mixture of minced garlic, chopped parsley, and extra virgin olive oil.
- Let the anchovies marinate in the mixture for at least 1 hour before serving.
- Serve the Anchoas en Vinagre as an appetizer with some crusty bread.
