Let's Get Started

  1. Clean the anchovies by removing the heads and innards, open them in half and remove the central bone.
  2. Place the anchovies in a deep dish with the skin facing upwards.
  3. Cover the anchovies with the white wine vinegar and let them marinate for at least 3 hours in the refrigerator.
  4. Drain the vinegar, and cover the anchovies with a mixture of minced garlic, chopped parsley, and extra virgin olive oil.
  5. Let the anchovies marinate in the mixture for at least 1 hour before serving.
  6. Serve the Anchoas en Vinagre as an appetizer with some crusty bread.
