Aloo Tama
Aloo Tama is a traditional Nepali curry made with potatoes and bamboo shoots. It is a flavorful and comforting dish that is often enjoyed with rice or roti.
Ingredients - Serves 4
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Oil - 2 tablespoons
- Salt - To taste
- Red chili powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Tomato - 1 medium, chopped
- Ginger - 1-inch piece, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Bamboo shoots - 1 cup, sliced
- Potatoes - 4 medium, peeled and diced
Let's Get Started
- Heat oil in a pan over medium heat.
- Add the chopped onion and sauté until golden brown.
- Add minced garlic and grated ginger. Sauté for another minute.
- Add turmeric powder, cumin powder, coriander powder, and red chili powder. Mix well.
- Add the diced potatoes and sliced bamboo shoots. Stir to coat them with the spices.
- Cover the pan and cook for about 10 minutes, or until the potatoes are tender.
- Add chopped tomatoes and salt. Mix well and cook for another 5 minutes.
- Garnish with fresh cilantro before serving.
- Serve hot with rice or roti.
