Ingredients - Serves 4

Let's Get Started

  1. Heat oil in a pan over medium heat.
  2. Add the chopped onion and sauté until golden brown.
  3. Add minced garlic and grated ginger. Sauté for another minute.
  4. Add turmeric powder, cumin powder, coriander powder, and red chili powder. Mix well.
  5. Add the diced potatoes and sliced bamboo shoots. Stir to coat them with the spices.
  6. Cover the pan and cook for about 10 minutes, or until the potatoes are tender.
  7. Add chopped tomatoes and salt. Mix well and cook for another 5 minutes.
  8. Garnish with fresh cilantro before serving.
  9. Serve hot with rice or roti.
