Aloo Matar
Aloo Matar is a delicious Indian dish made with potatoes and peas cooked in a flavorful tomato-based sauce.
Ingredients - Serves 4
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Oil - 2 tablespoons
- Salt - To taste
- Garam masala - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Green chili - 1, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1-inch piece, grated
- Tomatoes - 2 medium, pureed
- Onion - 1 medium, finely chopped
- Peas - 1 cup, fresh or frozen
- Potatoes - 3 medium, peeled and diced
Let's Get Started
- Heat oil in a pan over medium heat.
- Add cumin seeds and let them splutter.
- Add chopped onion and sauté until golden brown.
- Add grated ginger, minced garlic, and green chili. Sauté for a minute.
- Add pureed tomatoes and cook until the oil separates from the masala.
- Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
- Add diced potatoes and peas. Mix well to coat them with the masala.
- Cover the pan and cook for about 15 minutes, or until the potatoes are tender.
- Sprinkle garam masala and mix well.
- Garnish with fresh cilantro and serve hot with rice or roti.
