Almond Soup
A creamy, rich soup made from almonds, milk, and spices. Perfect for a light lunch or dinner.
Ingredients - Serves 4
- Nutmeg - 1/4 teaspoon
- White pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Flour - 2 tablespoons
- Butter - 2 tablespoons
- Onion - 1 small, finely chopped
- Milk - 4 cups
- Almonds - 1 cup, blanched and peeled
Let's Get Started
- In a blender, blend the almonds and 1 cup of milk until smooth.
- In a large pot, melt the butter over medium heat. Add the onion and cook until soft, about 5 minutes.
- Stir in the flour, salt, pepper, and nutmeg. Cook for 2 minutes, stirring constantly.
- Gradually whisk in the remaining 3 cups of milk. Bring to a boil, then reduce the heat to low and simmer for 5 minutes, stirring frequently.
- Stir in the almond mixture and cook for another 5 minutes, stirring frequently.
- Serve the soup hot, garnished with slivered almonds if desired.
