Ingredients - Serves 4

Let's Get Started

  1. In a blender, blend the almonds and 1 cup of milk until smooth.
  2. In a large pot, melt the butter over medium heat. Add the onion and cook until soft, about 5 minutes.
  3. Stir in the flour, salt, pepper, and nutmeg. Cook for 2 minutes, stirring constantly.
  4. Gradually whisk in the remaining 3 cups of milk. Bring to a boil, then reduce the heat to low and simmer for 5 minutes, stirring frequently.
  5. Stir in the almond mixture and cook for another 5 minutes, stirring frequently.
  6. Serve the soup hot, garnished with slivered almonds if desired.
