Albondigas en Salsa Española

Ingredients - Serves 4
- White wine - 1/2 cup
- Tomato sauce - 2 cups
- Olive oil - 2 tablespoons

- Parsley - 2 tablespoons, chopped
- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Egg - 1
- Milk - 1/4 cup
- Bread crumbs - 1/2 cup
- Ground pork - 1/2 pound
- Ground beef - 1/2 pound
Let's Get Started
- In a large bowl, combine the ground beef, ground pork, bread crumbs, milk, egg, half of the minced garlic, half of the chopped onion, parsley, salt, and pepper. Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 10 minutes. Remove the meatballs from the skillet and set aside.
- In the same skillet, add the remaining garlic and onion and cook until softened, about 5 minutes.
- Add the tomato sauce and wine to the skillet and bring to a simmer.
- Return the meatballs to the skillet and simmer in the sauce for 30 minutes, until the meatballs are cooked through and the sauce has thickened.
- Serve the Albondigas en Salsa Española with crusty bread or over rice.
