Albondigas
Albondigas, or Mexican meatball soup, is a traditional Mexican dish made with mint-infused meatballs that are cooked in a hearty broth with vegetables.
Ingredients - Serves 6
- Tomatoes - 2, diced
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Zucchini - 2, chopped
- Carrots - 2, chopped
- Chicken broth - 8 cups
- Salt and pepper - To taste
- Egg - 1
- Rice - 1/2 cup, uncooked
- Mint leaves - 1/4 cup, chopped
- Ground beef - 1 pound

- In a large bowl, combine the ground beef, mint leaves, rice, egg, salt, and pepper. Mix well and form into 1-inch meatballs.
- In a large pot, bring the chicken broth to a boil.
- Add the meatballs, carrots, zucchini, onion, garlic, and tomatoes to the pot.
- Reduce the heat to low, cover, and simmer for 30 minutes, or until the meatballs are cooked through and the vegetables are tender.
- Serve the soup hot, garnished with additional mint leaves if desired.
