al Forno's Grilled Pizza
This is a recipe for the famous grilled pizza from Al Forno restaurant in Providence, Rhode Island. The pizza dough is grilled, then topped with fresh ingredients and finished in the oven.
Ingredients - Serves 4
- Fresh basil leaves - 1/2 cup
- Mozzarella cheese - 2 cups, shredded
- Tomato sauce - 1 cup
- Cornmeal - For dusting
- Olive oil - 1/4 cup
- Salt - 1 1/2 teaspoons
- All-purpose flour - 4 cups
- Active dry yeast - 2 1/4 teaspoons
- Warm water - 1 1/2 cups
Let's Get Started
- In a large bowl, combine the warm water and yeast. Let stand until foamy, about 5 minutes.
- Add the flour, salt, and olive oil to the yeast mixture. Stir until a dough forms.
- Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes.
- Place the dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
- Preheat a grill to medium-high heat. Divide the dough into 4 pieces and roll each piece out into a thin circle.

- Flip the dough circles over and quickly top with the tomato sauce, mozzarella, and basil.
- Transfer the pizzas to a preheated oven and bake until the cheese is melted and bubbly, about 5 minutes.
