Ajoblanco
Ajoblanco is a popular Spanish cold soup made from almonds, garlic, bread, and olive oil. It's a refreshing and healthy dish, perfect for hot summer days.
Ingredients - Serves 4
- Grapes or melon - For garnish
- Salt - To taste
- White wine vinegar - 2 tablespoons
- Cold water - 1 litre
- Extra virgin olive oil - 100 ml
- Stale bread - 100 grams, crust removed
- Garlic - 2 cloves
- Blanched almonds - 200 grams
Let's Get Started
- Soak the stale bread in some water until it is softened.
- In a blender, combine the soaked bread, blanched almonds, and garlic. Blend until a smooth paste forms.
- While the blender is running, slowly add the olive oil in a steady stream.
- Add the white wine vinegar and blend again.
- Slowly add the cold water, blending until the soup is your desired consistency.
- Season with salt to taste.
- Chill the soup in the refrigerator for at least 2 hours before serving.
- Serve the ajoblanco cold, garnished with grapes or melon.
