Ajo Blanco is a refreshing Spanish cold soup made with almonds, garlic, bread, olive oil, and vinegar.

- Grapes - 1 cup, seedless, halved
- Salt - To taste
- Cold water - 1 cup
- White wine vinegar - 2 tablespoons
- Extra virgin olive oil - 1/4 cup
- Bread - 2 slices, crust removed
- Garlic - 2 cloves
- Almonds - 1 cup, blanched
Let's Get Started
- In a blender or food processor, combine the blanched almonds, garlic, bread, olive oil, vinegar, water, and salt.
- Blend until smooth and creamy.
- Taste and adjust the seasoning if needed.
- Refrigerate for at least 1 hour to chill.
- Serve the chilled soup in bowls, garnished with halved grapes, sliced almonds, and fresh mint leaves.
