Ahi Tuna Nicoise
A fresh and flavorful salad featuring seared ahi tuna, hard-boiled eggs, and a variety of colorful vegetables.
Ingredients - Serves 4
- Extra virgin olive oil - 1/2 cup
- Red wine vinegar - 1/4 cup
- Dijon mustard - 2 tablespoons
- Red onion - 1/2, thinly sliced
- Kalamata olives - 1/2 cup
- Hard-boiled eggs - 4, quartered
- Cucumber - 1, sliced
- Cherry tomatoes - 1 cup, halved
- Mixed salad greens - 8 cups
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Ahi tuna steaks - 4 (6 ounce)
Let's Get Started
- Season the ahi tuna steaks with salt and pepper.
- Heat the olive oil in a skillet over medium-high heat. Add the tuna steaks and sear for 2 minutes on each side. Remove from heat and let rest.
- In a large bowl, combine the salad greens, cherry tomatoes, cucumber, hard-boiled eggs, olives, and red onion.
- In a small bowl, whisk together the Dijon mustard, red wine vinegar, and extra virgin olive oil. Season with salt and pepper.
- Slice the seared tuna and add to the salad.
- Drizzle the dressing over the salad and gently toss to combine.
- Serve the salad immediately, garnished with additional salt and pepper if desired.
