Let's Get Started

  1. Combine the currants, raisins, candied lemon peel, candied orange peel, and rum in a bowl. Let soak for at least 2 hours, or overnight.
  2. In a large bowl, combine the warm milk, yeast, and a pinch of sugar. Let sit for 5 minutes, or until frothy.
  3. Add the remaining sugar, butter, eggs, cardamom, flour, and salt to the yeast mixture. Mix until a dough forms.
  4. Drain the soaked fruit, reserving the rum. Add the fruit and almonds to the dough and knead until well combined.
  5. Cover the dough and let rise in a warm place for 2 hours, or until doubled in size.
  6. Preheat the oven to 350°F (175°C).
  7. Shape the dough into a loaf and place on a baking sheet. Bake for 1 hour, or until golden brown.
  8. Brush the loaf with the reserved rum immediately after removing from the oven.
  9. Let the loaf cool completely before slicing and serving.
