Bremer Klaben
Bremer Klaben is a traditional German fruit bread from Bremen, usually enjoyed during the Christmas season. It's packed with dried fruits and nuts, and spiced with rum and cardamom.
Ingredients - Serves 8
- Almonds - 1/2 cup, chopped
- Salt - 1/2 teaspoon
- Flour - 4 cups
- Cardamom - 1 teaspoon
- Eggs - 2
- Butter - 1/2 cup, softened
- Sugar - 1/2 cup
- Active dry yeast - 1 packet
- Warm milk - 1 cup
- Rum - 1/2 cup
- Candied orange peel - 1/2 cup
- Candied lemon peel - 1/2 cup
- Raisins - 1 cup
- Dried currants - 1 cup
Let's Get Started
- Combine the currants, raisins, candied lemon peel, candied orange peel, and rum in a bowl. Let soak for at least 2 hours, or overnight.
- In a large bowl, combine the warm milk, yeast, and a pinch of sugar. Let sit for 5 minutes, or until frothy.
- Add the remaining sugar, butter, eggs, cardamom, flour, and salt to the yeast mixture. Mix until a dough forms.
- Drain the soaked fruit, reserving the rum. Add the fruit and almonds to the dough and knead until well combined.
- Cover the dough and let rise in a warm place for 2 hours, or until doubled in size.
- Preheat the oven to 350°F (175°C).
- Shape the dough into a loaf and place on a baking sheet. Bake for 1 hour, or until golden brown.
- Brush the loaf with the reserved rum immediately after removing from the oven.
- Let the loaf cool completely before slicing and serving.
