Île Flottante
Île Flottante, also known as Floating Island, is a classic French dessert consisting of meringue floating on crème anglaise.
Ingredients - Serves 4
- Caramel sauce - To taste
- Salt - A pinch
- Milk - 2 cups
- Vanilla extract - 1 teaspoon
- Sugar - 1 cup
- Eggs - 4
Let's Get Started
- Separate the egg yolks from the whites.
- Beat the egg whites until stiff, then gradually add half of the sugar and continue beating until glossy peaks form.
- In a saucepan, heat the milk with the vanilla extract until it starts to steam.
- In a separate bowl, whisk the egg yolks with the remaining sugar until pale and creamy.
- Gradually pour the hot milk into the egg yolk mixture, whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens into a custard.
- Pour the custard through a sieve into a serving dish.
- Spoon dollops of the beaten egg whites onto the custard, then chill in the fridge for at least 2 hours.
- Before serving, drizzle with caramel sauce.
