Ingredients - Serves 4

Let's Get Started

  1. Separate the egg yolks from the whites.
  2. Beat the egg whites until stiff, then gradually add half of the sugar and continue beating until glossy peaks form.
  3. In a saucepan, heat the milk with the vanilla extract until it starts to steam.
  4. In a separate bowl, whisk the egg yolks with the remaining sugar until pale and creamy.
  5. Gradually pour the hot milk into the egg yolk mixture, whisking constantly.
  6. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens into a custard.
  7. Pour the custard through a sieve into a serving dish.
  8. Spoon dollops of the beaten egg whites onto the custard, then chill in the fridge for at least 2 hours.
  9. Before serving, drizzle with caramel sauce.
