Zuppa Toscana
A hearty Italian soup made with sausage, potatoes, and kale in a savory broth.
Ingredients - Serves 6
- Salt and pepper - To taste
- Kale - 1 bunch, chopped
- Heavy cream - 1 cup
- Russet potatoes - 3, thinly sliced
- Chicken broth - 6 cups
- Garlic - 4 cloves, minced
- Onion - 1, chopped
- Italian sausage - 1 pound
Let's Get Started
- In a large pot, cook the sausage over medium heat until browned. Remove from the pot and set aside.
- In the same pot, add the onion and garlic and cook until softened.
- Add the chicken broth and bring to a boil.
- Add the potatoes and cook until tender, about 15 minutes.
- Stir in the heavy cream, kale, and cooked sausage. Season with salt and pepper.
- Simmer for another 10 minutes, until the kale is wilted and the soup is heated through.
