Zuivan
Zuivan is a traditional Mongolian dish made with lamb, vegetables, and spices.
Ingredients - Serves 6
- Fresh cilantro - For garnish
- Water - 4 cups
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Ginger - 1 tablespoon, grated
- Garlic - 4 cloves, minced
- Potatoes - 4, peeled and diced
- Carrots - 2, sliced
- Onion - 1 large, chopped
- Lamb - 1 kg, cut into cubes
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the lamb cubes and cook until browned on all sides.
- Add the chopped onion, sliced carrots, minced garlic, and grated ginger. Cook for 5 minutes, until the vegetables are slightly softened.
- Add the cumin, coriander, salt, and pepper. Stir well to coat the lamb and vegetables with the spices.
- Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 2 hours, or until the lamb is tender.
- Add the diced potatoes and continue to simmer for another 30 minutes, or until the potatoes are cooked through.
- Taste and adjust the seasoning if needed.
- Serve the zuivan hot, garnished with fresh cilantro.
