Zucchini Pancakes
These zucchini pancakes are a delicious and healthy way to enjoy zucchini. They are crispy on the outside and tender on the inside.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Parmesan cheese - 1/4 cup, grated
- Flour - 1/4 cup
- Egg - 1
- Zucchini - 2 medium, grated
Let's Get Started
- Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
- Squeeze the zucchini to remove as much liquid as possible.
- In a large bowl, whisk together the egg, flour, Parmesan cheese, garlic powder, salt, and black pepper.
- Add the squeezed zucchini to the bowl and mix until well combined.
- Heat the olive oil in a large skillet over medium heat.
- Drop spoonfuls of the zucchini mixture onto the skillet and flatten with the back of a spoon to form pancakes.
