  1. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
  2. Squeeze the zucchini to remove as much liquid as possible.
  3. In a large bowl, whisk together the egg, flour, Parmesan cheese, garlic powder, salt, and black pepper.
  4. Add the squeezed zucchini to the bowl and mix until well combined.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Drop spoonfuls of the zucchini mixture onto the skillet and flatten with the back of a spoon to form pancakes.
  7. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  8. Remove from the skillet and drain on a paper towel-lined plate.
