Zucchini and Carrot Noodles
A healthy and delicious alternative to traditional pasta, these zucchini and carrot noodles are easy to make and packed with flavor.
Ingredients - Serves 4
- Parmesan cheese - 1/2 cup, grated
- Salt and pepper - To taste
- Basil - A handful, chopped
- Cherry tomatoes - 1 cup, halved
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Carrots - 2 large
- Zucchini - 2 large
Let's Get Started
- Use a spiralizer to turn the zucchini and carrots into noodles.
- Heat the olive oil in a large pan over medium heat.
- Add the garlic and cook until fragrant, about 1 minute.
- Add the zucchini and carrot noodles and cook for 2-3 minutes, until just tender.
- Add the cherry tomatoes and basil, and season with salt and pepper. Cook for another 2 minutes.
- Serve the noodles topped with the grated Parmesan cheese.
