Zimino Di Calamari
Zimino di Calamari is a traditional Italian dish, a hearty squid stew in a rich tomato sauce with spinach and potatoes.
Ingredients - Serves 4
- Salt and pepper - To taste
- Potatoes - 2, peeled and diced
- Spinach - 200 grams, washed and chopped
- White wine - 1/2 cup
- Tomato paste - 2 tablespoons
- Squid - 1 kg, cleaned and cut into rings
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
- Add the squid and cook until it turns white, about 5 minutes.
- Stir in the tomato paste and white wine, scraping any browned bits from the bottom of the pot.
- Add the spinach and potatoes, then season with salt and pepper.
- Cover the pot and simmer for about 45 minutes, or until the squid is tender and the flavors are well combined.
- Serve the Zimino di Calamari hot, with crusty bread on the side if desired.
