Yangzhou Fried Rice
Yangzhou Fried Rice is a popular Chinese dish made with a colorful mix of ingredients. It's a great way to use up leftover rice.
Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Salt - To taste
- Soy sauce - 2 tablespoons
- Spring onions - 2, chopped
- Green peas - 1/2 cup
- Carrot - 1, diced
- Chicken breast - 100 grams, diced
- Shrimp - 100 grams, peeled and deveined
- Eggs - 3
- Cooked rice - 3 cups
Let's Get Started
- Heat 1 tablespoon of oil in a wok or large frying pan over medium heat. Add the eggs and scramble until fully cooked. Remove from the wok and set aside.
- Add the remaining oil to the wok. Add the shrimp and chicken and stir-fry until they start to change color.
- Add the carrot and peas and stir-fry for another 2 minutes.
- Add the cooked rice to the wok and stir-fry for a few minutes, breaking up any clumps of rice.
- Add the soy sauce and salt and stir well to combine.
- Return the scrambled eggs to the wok and add the spring onions. Stir well to combine.
- Serve the Yangzhou Fried Rice hot.
