Yangzhou Fried Rice

Let's Get Started

  1. Heat 1 tablespoon of oil in a wok or large frying pan over medium heat. Add the eggs and scramble until fully cooked. Remove from the wok and set aside.
  2. Add the remaining oil to the wok. Add the shrimp and chicken and stir-fry until they start to change color.
  3. Add the carrot and peas and stir-fry for another 2 minutes.
  4. Add the cooked rice to the wok and stir-fry for a few minutes, breaking up any clumps of rice.
  5. Add the soy sauce and salt and stir well to combine.
  6. Return the scrambled eggs to the wok and add the spring onions. Stir well to combine.
  7. Serve the Yangzhou Fried Rice hot.
