Xoi Vo
Xoi Vo is a traditional Vietnamese sticky rice dish topped with mung bean paste and shredded coconut.
Ingredients - Serves 4
- Shredded coconut - 1/2 cup
- Salt - 1/2 teaspoon
- Sugar - 1/4 cup
- Coconut milk - 1 cup
- Mung beans - 1 cup
- Glutinous rice - 2 cups
Let's Get Started
- Rinse the glutinous rice and mung beans separately under cold water.
- Soak the glutinous rice in water for at least 4 hours or overnight. Drain well.
- Steam the glutinous rice for 30 minutes or until cooked and sticky.
- Meanwhile, cook the mung beans in a pot of water until soft. Drain and mash into a paste.
- In a separate pot, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar is dissolved.
- Add the cooked glutinous rice to the pot with the coconut milk mixture. Stir well to combine.
- Divide the sticky rice into serving bowls. Top each bowl with a spoonful of mung bean paste and a sprinkle of shredded coconut.
- Serve hot and enjoy!
