Xoi Gac
Xoi Gac is a traditional Vietnamese sticky rice dish made with Gac fruit, giving it a vibrant red color and unique flavor.
Ingredients - Serves 4
- Shredded coconut - 1/4 cup
- Toasted sesame seeds - 2 tablespoons
- Salt - 1/2 teaspoon
- Sugar - 2 tablespoons
- Coconut milk - 1 cup
- Glutinous rice - 2 cups
- Gac fruit - 1
Let's Get Started
- Cut the Gac fruit in half and scoop out the seeds and pulp. Set aside.
- Wash the glutinous rice thoroughly and soak it in water for 4 hours or overnight.
- Drain the rice and steam it for 30 minutes, or until cooked and sticky.
- While the rice is steaming, blend the Gac fruit pulp in a blender until smooth.
- In a saucepan, combine the Gac fruit puree, coconut milk, sugar, and salt. Cook over low heat until the mixture thickens slightly.
- Once the rice is cooked, transfer it to a large bowl and pour the Gac fruit mixture over it. Mix well to evenly coat the rice.
- Serve the Xoi Gac in individual bowls, garnished with toasted sesame seeds and shredded coconut.
