Xató Salad
Xató is a typical salad from the regions of Penèdes and Garraf, in Catalonia, Spain. It consists of a romesco sauce served with endive, anchovies, and tuna.
Ingredients - Serves 4
- Salt - To taste
- Olive oil - 100 ml
- Red wine vinegar - 2 tablespoons
- Tomatoes - 2
- Garlic - 2 cloves
- Hazelnuts - 50 grams
- Almonds - 50 grams
- Tuna - 200 grams
- Anchovies - 8 fillets
- Endive - 4 heads
Let's Get Started
- Clean the endive and arrange it on a plate.
- Place the anchovies and tuna on top of the endive.
- To make the sauce, roast the almonds and hazelnuts in a pan until they are golden brown.
- Peel the garlic and tomatoes and add them to a blender along with the roasted nuts.
- Add the vinegar, olive oil, and salt to the blender and blend until smooth.
- Pour the sauce over the salad and serve.
