  1. Preheat the oven to 350°F and lightly grease a baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the onions, celery, and garlic and cook until softened.
  3. Add the mushrooms, thyme, sage, salt, and pepper. Cook until the mushrooms are tender.
  4. In a large bowl, combine the bread cubes, mushroom mixture, and chicken broth. Stir until the bread is fully moistened. Let it sit for a few minutes so the bread can absorb the broth.
  5. Stir in the beaten eggs until well combined.
  6. Transfer the mixture to the prepared baking dish.
  7. Cover with foil and bake for 30 minutes. Then remove the foil and bake for another 15-20 minutes, until the top is golden and crispy.
