Wild Mushroom Stuffing

Ingredients - Serves 8
- Eggs - 2, beaten
- Chicken broth - 2 cups
- Bread cubes - 8 cups
- Salt and pepper - To taste
- Fresh sage - 1 tablespoon
- Fresh thyme - 1 tablespoon
- Wild mushrooms - 1 pound, chopped
- Garlic - 2 cloves, minced
- Celery - 2 stalks, chopped
- Onions - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Preheat the oven to 350°F and lightly grease a baking dish.
- Heat the olive oil in a large skillet over medium heat. Add the onions, celery, and garlic and cook until softened.
- Add the mushrooms, thyme, sage, salt, and pepper. Cook until the mushrooms are tender.
- In a large bowl, combine the bread cubes, mushroom mixture, and chicken broth. Stir until the bread is fully moistened. Let it sit for a few minutes so the bread can absorb the broth.
- Stir in the beaten eggs until well combined.
- Transfer the mixture to the prepared baking dish.
- Cover with foil and bake for 30 minutes. Then remove the foil and bake for another 15-20 minutes, until the top is golden and crispy.
