Wild Boar Sausages

Ingredients - Serves 4
- Salt and pepper - To taste
- Rosemary - 1 tablespoon, chopped
- Tomato paste - 2 tablespoons
- Red wine - 1 cup
- Garlic - 2 cloves, minced
- Onions - 2, thinly sliced
- Olive oil - 2 tablespoons
- Wild boar sausages - 8
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the sausages and cook until browned on all sides, about 10 minutes. Remove from the skillet and set aside.
- In the same skillet, add the onions and garlic and cook until softened, about 5 minutes.
- Add the red wine, scraping the bottom of the skillet to loosen any browned bits.
- Stir in the tomato paste, rosemary, salt, and pepper.
- Return the sausages to the skillet, cover, and simmer for 30 minutes, or until the sausages are cooked through.
- Serve the sausages with the onion and wine sauce.
