Vietnamese Pho
A traditional Vietnamese soup consisting of broth, rice noodles, herbs, and meat. This recipe uses beef as the main protein.
Ingredients - Serves 4
- Lime wedges - 4
- Bean sprouts - 1 cup
- Cilantro - 1/2 cup, chopped
- Scallions - 2, sliced
- Beef sirloin - 1/2 pound, thinly sliced
- Rice noodles - 1 pound
- Salt - 2 teaspoons
- Fish sauce - 1 tablespoon
- Coriander seeds - 1 tablespoon
- Cardamom pods - 2
- Cinnamon stick - 1
- Cloves - 6 pieces
- Star anise - 5 pieces
- Ginger - 1 piece, halved lengthwise
- Onions - 2, halved
- Beef bones - 2 pounds
Let's Get Started
- Char the onions and ginger over an open flame (either on a grill or gas stove).
- Place the beef bones in a large pot filled with water. Bring to a boil and boil for 5 minutes.
- Drain the bones and rinse under warm water. Clean the pot and return the bones to the pot.
- Add the charred onions, ginger, star anise, cloves, cinnamon stick, cardamom pods, and coriander seeds to the pot.
- Fill the pot with water and bring to a boil. Reduce heat to low, cover, and simmer for 1-2 hours.
- Strain the broth and return to the pot. Stir in the fish sauce and salt.
- Soak the rice noodles in warm water for 30 minutes, then drain and set aside.
- Divide the noodles among 4 bowls. Top with the beef slices, scallions, and cilantro.
- Pour the hot broth over the noodles, cooking the beef slices.
- Serve with bean sprouts and lime wedges on the side.
