Vermont Cheddar Soup
A creamy, comforting soup made with sharp Vermont cheddar and a hint of beer for depth of flavor.
Ingredients - Serves 4
- Salt and pepper - To taste
- Sharp vermont cheddar cheese - 2 cups, shredded
- Beer - 1/2 cup
- Milk - 2 cups
- Chicken broth - 2 cups
- All-purpose flour - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Butter - 2 tablespoons
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Stir in the flour to make a roux, cooking for 2 minutes.
- Slowly whisk in the chicken broth, milk, and beer.
- Bring to a simmer and cook until the soup is thickened, about 10 minutes.
- Remove from heat and stir in the shredded cheese until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with extra shredded cheese if desired.
