Veggie Burger with Cheese and Avocado
This delicious veggie burger is packed with flavor and topped with melted cheese and creamy avocado.
Ingredients - Serves 4
- Mayonnaise - 4 tablespoons
- Tomato - 1, sliced
- Lettuce - 4 leaves
- Avocado - 1, sliced
- Cheddar cheese - 4 slices
- Burger buns - 4
- Salt and pepper - To taste
- Paprika - 1/2 teaspoon
- Cumin - 1 teaspoon
- Egg - 1
- Breadcrumbs - 1/2 cup
- Garlic - 2 cloves, minced
- Onion - 1/2, finely chopped
- Red bell pepper - 1/2, finely chopped
- Quinoa - 1/2 cup, cooked
- Black beans - 1 can, drained and rinsed
Let's Get Started
- In a large bowl, mash the black beans with a fork or potato masher.
- Add the cooked quinoa, red bell pepper, onion, garlic, breadcrumbs, egg, cumin, paprika, salt, and pepper. Mix well to combine.
- Form the mixture into 4 patties.
- Heat a grill or skillet over medium heat and lightly oil the surface.
- Cook the veggie burger patties for about 4-5 minutes per side, or until golden brown and heated through.
- During the last minute of cooking, place a slice of cheddar cheese on each patty to melt.
- Toast the burger buns on the grill or in a toaster.
- Spread mayonnaise on the bottom half of each bun.
- Place a veggie burger patty on top of the mayonnaise.
- Top with avocado slices, lettuce, and tomato.
- Cover with the top half of the bun.
- Serve the veggie burgers with your favorite side dish and enjoy!
