Veggie Burger with Cheese and Avocado

Ingredients - Serves 4

Let's Get Started

  1. In a large bowl, mash the black beans with a fork or potato masher.
  2. Add the cooked quinoa, red bell pepper, onion, garlic, breadcrumbs, egg, cumin, paprika, salt, and pepper. Mix well to combine.
  3. Form the mixture into 4 patties.
  4. Heat a grill or skillet over medium heat and lightly oil the surface.
  5. Cook the veggie burger patties for about 4-5 minutes per side, or until golden brown and heated through.
  6. During the last minute of cooking, place a slice of cheddar cheese on each patty to melt.
  7. Toast the burger buns on the grill or in a toaster.
  8. Spread mayonnaise on the bottom half of each bun.
  9. Place a veggie burger patty on top of the mayonnaise.
  10. Top with avocado slices, lettuce, and tomato.
  11. Cover with the top half of the bun.
  12. Serve the veggie burgers with your favorite side dish and enjoy!
