Veggie Burger Sandwich
This delicious veggie burger sandwich is made with a homemade veggie patty, fresh vegetables, and a flavorful sauce.
Ingredients - Serves 4
- Mustard - 1 tablespoon
- Ketchup - 2 tablespoons
- Mayonnaise - 1/4 cup
- Avocado - 1, sliced
- Red onion - 1/2, sliced
- Tomato - 1, sliced
- Lettuce - 4 leaves
- Burger buns - 4
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Carrot - 1, grated
- Red bell pepper - 1/2, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1/2, finely chopped
- Oats - 1/2 cup
- Quinoa - 1/2 cup, cooked
- Black beans - 1 can, drained and rinsed
Let's Get Started
- In a large bowl, mash the black beans with a fork or potato masher.
- Add the cooked quinoa, oats, onion, garlic, red bell pepper, carrot, cumin, paprika, salt, and pepper. Mix well to combine.
- Form the mixture into patties and place them on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 375°F for 15-20 minutes, or until the patties are firm and golden brown.
- While the patties are baking, prepare the sauce by mixing together mayonnaise, ketchup, and mustard in a small bowl.
- Toast the burger buns if desired.
- Spread the sauce on the bottom half of each bun.
- Place a veggie patty on top of the sauce.
- Top with lettuce, tomato slices, red onion slices, and avocado slices.
- Cover with the top half of the bun.
