Ingredients - Serves 4

Let's Get Started

  1. In a large bowl, mash the black beans with a fork or potato masher.
  2. Add the cooked quinoa, oats, onion, garlic, red bell pepper, carrot, cumin, paprika, salt, and pepper. Mix well to combine.
  3. Form the mixture into patties and place them on a baking sheet lined with parchment paper.
  4. Bake in a preheated oven at 375°F for 15-20 minutes, or until the patties are firm and golden brown.
  5. While the patties are baking, prepare the sauce by mixing together mayonnaise, ketchup, and mustard in a small bowl.
  6. Toast the burger buns if desired.
  7. Spread the sauce on the bottom half of each bun.
  8. Place a veggie patty on top of the sauce.
  9. Top with lettuce, tomato slices, red onion slices, and avocado slices.
  10. Cover with the top half of the bun.
  11. Serve the veggie burger sandwiches with your favorite side dish and enjoy!
