Vegetarian Lentil Meatloaf

Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 375°F and lightly grease a loaf pan.
  2. Cook the lentils according to package instructions, then set aside to cool.
  3. Heat the olive oil in a pan over medium heat. Add the onion, carrot, and garlic and cook until softened.
  4. In a large bowl, combine the cooked lentils, sautéed vegetables, tomato paste, soy sauce, thyme, oats, eggs, salt, and pepper. Mix well.
  5. Transfer the mixture to the prepared loaf pan, pressing it down firmly.
  6. Bake for 45-50 minutes, or until the top is browned and the loaf is firm to the touch.
  7. Let the loaf cool in the pan for 10 minutes, then slice and serve.
