Vegetarian Lentil Meatloaf
A hearty and healthy vegetarian meatloaf made with lentils and packed with flavor.
Ingredients - Serves 6
- Salt and pepper - To taste
- Eggs - 2
- Oats - 1 cup, rolled
- Thyme - 1 teaspoon, dried
- Soy sauce - 1 tablespoon
- Tomato paste - 2 tablespoons
- Garlic - 2 cloves, minced
- Carrot - 1, finely chopped
- Onion - 1, finely chopped
- Olive oil - 1 tablespoon
- Green lentils - 1 cup, dry
Let's Get Started
- Preheat the oven to 375°F and lightly grease a loaf pan.
- Cook the lentils according to package instructions, then set aside to cool.
- Heat the olive oil in a pan over medium heat. Add the onion, carrot, and garlic and cook until softened.
- In a large bowl, combine the cooked lentils, sautéed vegetables, tomato paste, soy sauce, thyme, oats, eggs, salt, and pepper. Mix well.
- Transfer the mixture to the prepared loaf pan, pressing it down firmly.
- Bake for 45-50 minutes, or until the top is browned and the loaf is firm to the touch.
- Let the loaf cool in the pan for 10 minutes, then slice and serve.
