Let's Get Started

  1. Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Return the beef to the pot. Add the potatoes, beef broth, diced tomatoes, bay leaf, salt, and pepper.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for about 2 hours, or until the beef is tender.
