Vegetable Beef Soup
A hearty, comforting soup that's packed with vegetables and tender chunks of beef.
Ingredients - Serves 6
- Salt and pepper - To taste
- Bay leaf - 1
- Diced tomatoes - 1 can
- Beef broth - 6 cups
- Potatoes - 2, chopped
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Beef stew meat - 1 pound
Let's Get Started
- Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Return the beef to the pot. Add the potatoes, beef broth, diced tomatoes, bay leaf, salt, and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 2 hours, or until the beef is tender.
