Vegan Pastrami Sandwich
This vegan pastrami sandwich is made with seitan, a plant-based protein, and is packed with flavor from a homemade spice rub and tangy sauerkraut.
Ingredients - Serves 4
- Rye bread - 8 slices
- Vegan mayo - 1/4 cup
- Sauerkraut - 1 cup
- Mustard powder - 1/2 teaspoon
- Coriander - 1/2 teaspoon
- Black pepper - 1 teaspoon
- Garlic powder - 1 teaspoon
- Paprika - 1 tablespoon
- Seitan - 1 pound
Let's Get Started
- Preheat the oven to 350°F.
- In a small bowl, combine the paprika, garlic powder, black pepper, coriander, and mustard powder.
- Rub the spice mixture all over the seitan.
- Place the seitan on a baking sheet and bake for 30 minutes, or until heated through.
- Spread the vegan mayo on one side of each slice of bread.
- Slice the seitan into thin slices and divide among 4 slices of bread.
- Top the seitan with the sauerkraut and the remaining slices of bread.
- Serve the sandwiches warm or at room temperature.
