Let's Get Started

  1. Preheat the oven to 350°F.
  2. In a small bowl, combine the paprika, garlic powder, black pepper, coriander, and mustard powder.
  3. Rub the spice mixture all over the seitan.
  4. Place the seitan on a baking sheet and bake for 30 minutes, or until heated through.
  5. Spread the vegan mayo on one side of each slice of bread.
  6. Slice the seitan into thin slices and divide among 4 slices of bread.
  7. Top the seitan with the sauerkraut and the remaining slices of bread.
  8. Serve the sandwiches warm or at room temperature.
