Vanilla Gelato
This classic Italian dessert is made with milk, cream, sugar, and vanilla.
Ingredients - Serves 6
- Egg yolks - 6
- Vanilla bean - 1, split and scraped
- Sugar - 3/4 cup
- Heavy cream - 2 cups
- Whole milk - 1 cup
Let's Get Started
- In a saucepan, combine the milk, cream, sugar, and vanilla bean and heat over medium heat until steaming.
- In a large bowl, whisk the egg yolks until pale yellow.
- Slowly pour the hot milk mixture into the egg yolks, whisking constantly.
- Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until thickened enough to coat the back of a spoon.
- Strain the mixture through a fine-mesh sieve into a bowl.
- Cover and chill in the refrigerator for at least 2 hours, or until completely cold.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
- Transfer the gelato to a container and freeze until firm, about 2 hours.
