Vanilla Gelato

Ingredients - Serves 6

Let's Get Started

  1. In a saucepan, combine the milk, cream, sugar, and vanilla bean and heat over medium heat until steaming.
  2. In a large bowl, whisk the egg yolks until pale yellow.
  3. Slowly pour the hot milk mixture into the egg yolks, whisking constantly.
  4. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until thickened enough to coat the back of a spoon.
  5. Strain the mixture through a fine-mesh sieve into a bowl.
  6. Cover and chill in the refrigerator for at least 2 hours, or until completely cold.
  7. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  8. Transfer the gelato to a container and freeze until firm, about 2 hours.
