Udon with Chicken Broth
This comforting udon noodle soup is made with a flavorful chicken broth and topped with tender chicken slices.
Ingredients - Serves 2
- Soft-boiled eggs - 2
- Spinach - 2 cups
- Garlic - 2 cloves, minced
- Fresh ginger - 1 tablespoon, grated
- Green onions - 2, sliced
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Chicken broth - 4 cups
- Chicken breast - 1, boneless and skinless
- Udon noodles - 8 ounces
Let's Get Started
- Cook the udon noodles according to the package instructions. Drain and set aside.
- Slice the chicken breast into thin strips.
- In a large pot, bring the chicken broth to a boil.
- Add the soy sauce, mirin, green onions, ginger, and garlic to the pot. Stir well.
- Add the chicken slices to the broth and cook for 5-7 minutes, or until cooked through.
- Add the spinach to the pot and cook for an additional 2 minutes, or until wilted.
- Divide the cooked udon noodles between two bowls.
- Ladle the chicken broth with chicken and spinach over the noodles.
- Garnish each bowl with a soft-boiled egg.
