Let's Get Started

  1. Cook the udon noodles according to the package instructions. Drain and set aside.
  2. Slice the chicken breast into thin strips.
  3. In a large pot, bring the chicken broth to a boil.
  4. Add the soy sauce, mirin, green onions, ginger, and garlic to the pot. Stir well.
  5. Add the chicken slices to the broth and cook for 5-7 minutes, or until cooked through.
  6. Add the spinach to the pot and cook for an additional 2 minutes, or until wilted.
  7. Divide the cooked udon noodles between two bowls.
