Udon with Beef Broth
This hearty udon noodle soup is made with flavorful beef broth and tender beef slices.
Ingredients - Serves 2
- Salt and pepper - To taste
- Sesame oil - 1 teaspoon
- Mushrooms - 4 ounces, sliced
- Baby bok choy - 2, halved
- Green onions - 2, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Beef broth - 4 cups
- Udon noodles - 8 ounces
- Beef sirloin - 8 ounces, thinly sliced
Let's Get Started
- In a large pot, bring the beef broth to a boil.
- Add the soy sauce, mirin, ginger, and garlic to the broth. Stir to combine.
- Reduce the heat to low and simmer for 10 minutes to allow the flavors to meld.
- Meanwhile, cook the udon noodles according to the package instructions. Drain and set aside.
- In a separate pan, heat the sesame oil over medium-high heat.
- Add the beef slices and cook for 2-3 minutes, or until browned. Season with salt and pepper.
- Add the mushrooms, bok choy, and green onions to the pan. Cook for an additional 2 minutes.
- Divide the cooked udon noodles between two bowls.
- Pour the beef broth over the noodles, then top with the beef slices, vegetables, and broth.
- Garnish with additional sliced green onions, if desired.
