Udon and Rice Bowl
This delicious udon and rice bowl combines thick udon noodles, tender beef, and flavorful vegetables in a savory sauce.
Ingredients - Serves 2
- Sesame seeds - 1 tablespoon
- Green onions - 2, sliced
- Bell pepper - 1, thinly sliced
- Carrot - 1, julienned
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Vegetable oil - 1 tablespoon
- Sugar - 1 teaspoon
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Beef sirloin - 8 ounces, thinly sliced
- Udon noodles - 8 ounces
Let's Get Started
- Cook the udon noodles according to the package instructions. Drain and set aside.
- In a small bowl, mix together the soy sauce, mirin, and sugar. Set aside.
- Heat the vegetable oil in a large skillet or wok over high heat.
- Add the beef slices and stir-fry for 2-3 minutes, until browned. Remove from the skillet and set aside.
- In the same skillet, add the garlic and ginger. Stir-fry for 1 minute.
- Add the carrot, bell pepper, and green onions. Stir-fry for 2-3 minutes, until the vegetables are crisp-tender.
- Return the beef to the skillet and pour in the soy sauce mixture. Cook for 1-2 minutes, until the sauce thickens slightly.
- Divide the cooked udon noodles between two bowls.
- Top the noodles with the beef and vegetable mixture.
- Sprinkle with sesame seeds.
- Serve hot and enjoy!
